I’m an opportunistic grazer. If I don’t plan breakfast or lunch, I tend to look for leftovers from dinner or end up creating meals of peanut butter and crackers or tuna fish (and I’m not a big fan of tuna, so it’s never a satisfying meal).
I plan dinners because other members of my family eat what I make. Hmmm, I just realized that planning breakfast and lunch would be acts of self-care since I wouldn’t be scavenging through my kitchen to make those meals.
Today’s task – create three go-to lunches for which you usually have the components on-hand and that take no-or-little-fuss to prepare. So, if you want to eat more salads and make that a go-to meal, then you’ll either need to purchase prepared salads or spend some time once a week doing the prep work.
